CloseEstablished in 1942 by Jules Lassalle, then taken over by his wife and daughter upon his death, the winery has been in the hands of granddaughter Angeline Templier since 2006. A blend of 60% Pinot Meunier, 20% Pinot Noir and 20% Chardonnay, all from 1er cru vineyards, this is practically a Blanc de Noirs. The grapes are crushed in a 50 year old wooden basket press before fermentation with full malo followed by aging for 48 months in bottle prior to disgorgement. The nose offers a whiff of brioche, honeycrisp apple, and white flowers. The palate follows with poached pear, ripe stone fruit, subtle berry and marzipan notes backed by crisp yet balanced acidity. Serve as an aperitif alongside smoked salmon and creme fraiche with a touch of dill over toast, or drink alongside creamy lobster bisque.
