CloseJoão Pato was the first to produce DO Bairrada wines back in 1970 but now, his granddaughter Maria runs the estate and makes her wines outside the DO regulations for more freedom of expression. Rosa Duck is a delicious, scintillatingly sparkler that defies categorization. Made mostly from the Maria Gomes varietal (aka Firnao Pires) from 25 year old vines planted to several plots of chalky-clay soils, the juice is gently pressed into concrete eggs where it macerates on Baga skins, extracting color and tannin. Fermentation takes place in stainless steel and then in bottle with a dosage, where the bubbles are trapped, as in Champagne, but it’s not disgorged, like a PetNat. Medium-bodied with crisp acidity, fresh red berry and zesty citrus flavors, it an easily pairable wine, great for parties, picnics, cheese platters or clam bakes!
