embarked on a journey to bring this lost and forgotten heirloom grain back to life. 13 years later, it's finally in the bottle. Horton Rye is not grown anywhere else on Earth. The debut edition of Jaywalk Straight Rye is a blend of 6, 7, and 8 year old whiskey with a mash bill of 75% NY Rye, 13% Corn and 12% Malted Barley. The rye portion is a blend of Horton Heirloom Rye and Pedersen Field Race Rye, all grown organically in Seneca Falls, NY. The barrel entry proof is 115 and then it's bottled at 92 proof, the ideal dilution for most cocktails. Aged exclusively in 53 gallon barrels, Char #3. The flavor goes well beyond generic ‘spice’ that is commonly associated with rye whiskey. It possesses darker, caramelized and floral sugars with a range of tropical fruits, from candied pineapple and mango on the palate to honeyed notes of ripe apricot on the nose. Pitch perfect in a classic Manhattan, Old Fashioned or Vieux Carré.
