CloseMade from the sotol plant (a desert shrub also known as desert spoon, which thrives in Chihuahua) Sotol is a distilled spirit similar in profile to mezcal and tequila. This selection from La Higuera is produced in Aldama, Chihuahua by Master Sotolero Gerardo Ruelas, and is roasted in clay pits for several days before being double-distilled in copper alembic stills – a similar process to the production of some mezcals. Round and balanced, expect notes of wild desert herbs and tropical fruit, finishing with wisps of light smokiness. Drink neat, or with prickly pear juice and a lime.
