2016 Happs Pinot Noir - Margaret River, Western Australia
The relatively mild, cool climate of Margaret River produces some of the most elegant Pinot Noir in Australia. Planted at the Three Hills vineyard, Happs Pinot is hand-pruned and hand-picked at the perfect ripeness level to maintain bright fruit and great acidity. It undergoes partial wild-yeast fermentation in barrel, follwed by aging in French oak barrels for ten months prior to bottling. It’s light to medium bodied with bright, fresh strawberry and red currant notes with a subtle scent eucalyptus and an herbaceous, black tea note. Pairs wonderfully with Dub Pie’s Savory Chicken pie.
