2016 Trabanco Natural Cider - Asturias, Spain
Trabanco cider is fermented with indigenous yeasts from only estate grown, native Asturian apples. This cider is tart, funky and pleasantly sour, with subtle herbaceous and fermentation flavors that lend a whiff of sauteed mushrooms. Serve cold and in a wide glass, poured from great height to release some dissolved CO2. Incredibly versatile, this pairs wonderfully with washed rind cheese and chorizo, paella, sardines & olives, or even braised pork!
