2017 Commanderie de Peyrassol Rose - Cotes de Provence, France
A pale, salmon-hued blend of old-vine Cinsault, Grenache and Syrah from the Cotes de Provence, Peyrassol exhibits a lovely fruit blossom nose and finishes crisply dry with a stony touch. Made from the direct press method, the grapes undergo cold maceration before fermentation to extract a little more flavor and color. The fermentation takes place under controlled temperatures and is exceptionally long, resulting in a rosé that is both lively and fresh. Pairs perfectly with salads, light fish and a wide range of cheeses.
