Kokuryu ‘Black Dragon’ Junmai Ginjo Sake - Fukui, Japan (720ml)
Kokuryu Black Dragon, made from 500 Mangoku rice polished down to 55%, has the imposing presence of sakes brewed in the Noto Toji style of Western Japan. This extremely well balanced sake achieves the near impossible of being both expansive and pure. There hints of fruit, mineral, and floral notes with an illusion of sweetness that’s tempered by savory elements. Delicious with hearty fare like braised Korean short ribs, Japanese pork, root vegetables or more adventurous sushi rolls. Do not overchill or you’ll lose some of the complexity. Best enjoyed at 50-60 degrees, or warmed to 105-115 degrees.
