A stunning sake that’s subtle and ethereal despite a bit of viscosity that gives it a velvety texture. Brewed in winter using the lengthy, labor-intensive Yamahai method and released in the fall, this limited production Ginjo uses Miyamanishiki rice with a polish ratio of 55%, meaning that they use only the best 45% from the heart of the grain. Seductive aromas ofwhite flowers, tropical fruit and a hint of persimmon combine beautifully with a fine balance of acidity and flavor. Perfect with a wide range of dishes from Szechuan eggplant to roasted root vegetables to BBQ spare ribs but it’s so delicious, it can certainly be enjoyed on its own.
